Speaking to your very first point about background noise though, there isn't much you'll be able to do software or hardware wise to mitigate that AND still keep the fidelity you want for ASMR content. In short: Get an interface with two XLR inputs, and something like the 3.5mm to dual XLR adapter. However, the input impedances are different, you have multiple inline signal adapters, and multiple points of potential failure- ie it's a sloppy setup just begging for something to go wrong.
